New Year's Traditional Recipes: Black-eyed Peas & Ham

Ingredients

3 1/2 cups Fresh or frozen black-eyed peas  thawed
3 cups chicken stock with roasted garlic
4 oz ham or pork Tasso, finely chopped
1 small yellow onion,
finely minced
2 tablespoons red wine vinegar
1teaspoon minced garlic
1 bay leaf
1/2 teaspoon dried thyme
1/4 teaspoon crushed red pepper

Place all of  the ingredients to boil in heavy large pot. Reduce heat and simmer until peas are tender, stirring occasionally, about 45 minutes. Add water or more chicken broth if needed. Season to taste with salt and pepper.
