Santa's Favorite Recipes: Zucchini Stuffed Seashell Pasta
Ingredients
Cooked pasta seashells, 10 per person
1 1/4 cup clarified butter
10 peeled and seeded zucchinis
1/4 cup clarified butter
2 cups diced onions
salt, black and red pepper to taste
2 tablespoons fresh minced garlic
1/2 cup Parmesan cheese
1/2 cup shredded jalapeno jack cheese

Finely dice the zucchinis. In a saucepan, sauté zucchini, and onions until wilted. Add garlic and season with salt, black and red peppers to taste. Add jack cheese and Parmesan cheese; cook until thoroughly combined. Stuff the zucchini mixture into the pasta shells and bake in 300 degree oven until golden brown. |
