Ingredients
1/2
cup butter (not margarine)
Sauté onion in butter until transparent. Add vegetables,
chicken stock, salt and red pepper. Cook over medium heat in a covered pot for
about 45 minutes or until tender.
Pureé mixture in blender. Return to pot and add cream. Season if
needed.

2 medium potatoes, peeled and sliced
2 carrots, peeled and sliced
4 cups fresh or 2 packages frozen and defrosted yellow sliced squash
1 quart chicken stock
1 tablespoon salt
1/4 teaspoon red pepper
1 cup heavy cream
paprika
