Ingredients
1 1/2 lbs chicken livers, finely ground
3 lbs chicken gizzards, finely ground
1/4 cup oil
3 cups long grain rice, cooked or 6 cups cornbread, crumbled
2 medium onions, finely chopped
2 bell peppers, finely chopped
1/4 cup fresh parsley, finely chopped
1/4 cup green onions
salt and pepper to taste

In large pan, brown ground livers and gizzards in 1/4 cup oil. When well browned, add onions, bell peppers, salt and pepper. Sauté until vegetables wilt. Continue to cook slowly, stirring often. Add water or chicken broth as needed to maintain a medium consistency. Simmer over slow heat for approximately 2 hours. When mixture is cooked, add onion tops and parsley. Season to taste. Add to rice or cornbread and mix well.
