Lobster Florentine in Pernod Creamed Spinach

Ingredients
1 1/4 pound chick lobsters
1 lb diced bacon
2 cups finely diced onions
2 lbs fresh spinach
salt, black and red peppers to taste
1 cup chicken stock
1 quart heavy cream
1/4 cup Pernod liqueur

Steam lobsters and keep warm while preparing spinach. In a heavy saucepan, render bacon. Add onion and sauté until transparent. Add fresh spinach leaves and sauté until wilted. Season with salt, black and red peppers to taste. Add heavy cream and then chicken stock. Reduce mixture until desired consistency is reached. Carefully remove lobster meat from shells; place over creamed spinach.
