Ingredients
1 lb. pork liver
1 tablespoon vinegar
3/4 lb. pork fat, sliced
3 tablespoons butter
1/3 cup flour
1 cup milk
8 anchovies
2 medium onions, finely minced
2 1/2 teaspoons salt
1/4 teaspoon ground cloves
1 egg, beaten
1 tablespoon bread crumbs
black pepper to taste
2 cloves garlic, minced

Cover liver with cold water and vinegar. Soak for one hour. Line loaf pan with very thin strips of pork fat. Put remaining fat through food processor or chopper. In saucepan, melt butter, add flour and milk making smooth white sauce. Add fat and continue to cook slowly Grind cleaned liver, onions and anchovies in food processor or grinder, using finest setting. Combine with white sauce. Strain through medium sieve. Add salt and spice. Add beaten egg and bread crumbs along with pepper and minced garlic. Pour in lined pan. Place pan in larger pan of water and bake in 300 degree oven for one hour. Chill and serve with crackers, melba toast, French bread rounds and lemon wedges.
