Santa's Favorite Recipes: Christmas Cherries
Ingredients
1/2
cup shortening
1/4 cup granulated sugar
1 egg, separated
1/2 teaspoon vanilla extract
1 tablespoon grated orange rind
1 1/2 tablespoon grated lemon peel
1 tablespoon lemon juice
1 cup pastry flour, sifted
1/2 cup walnuts or pecans, very finely chopped
6 or 8 candied cherries

Cream sugar and shortening together. Add beaten egg yolk, vanilla, orange and lemon zest and lemon juice. Add flour to creamed mixture. Chill for at least one hour. Roll dough into small balls 1/8" in diameter. Roll balls in slightly beaten egg white, then in nut meat. Place on greased baking sheet and press a small piece of cherry on each cookie. Bake in 350 degree oven for twenty minutes
