Thumb Print Cookies
Ingredients
|
1 cup softened shortening |
| 1 cup sugar |
| 2 egg yolks |
| 1 teaspoon grated lemon rind (optional) |
| 2 cups sifted all-purpose flour |
| 3/4 teaspoon cinnamon |
| 1/2 teaspoon powered cloves |
| 1 cup ground almonds or filberts |

Cream together shortening, sugar and egg yolks. Add all other ingredients, mix well. Chill dough overnight or for at least 1 hour. Preheat oven to 400 degrees. Roll dough between two sheets of wax paper until it is 1/8" thick. Cut into two inch rounds with cookie cutter or a small glass dipped lightly in flour. Make a slight indent with your thumb in the center of each cookie and add a dab of raspberry jam or your favorite jam. Place on ungreased cookie sheet. Bake for about 8 minutes or until done.
