Santa's Favorite Recipes: Peanut Butter Oatmeal Bar Cookies
Ingredients

cup all-purpose flour
1/2
cup packed born sugar
1/4
teaspoon baking soda
1/4
cup peanut butter
3
tablespoons shortening
1
egg, beaten
1
tablespoon milk
1/2
teaspoon vanilla
1/4
cup quick-cooking rolled oats
Peanut Butter Frosting
3/4
cup powdered sugar, sifted
1
tablespoon butter or margarine, softened
1
tablespoon peanut butter
2
to 3 teaspoons milk

Stir together flour, sugar, baking soda and 1/8 teaspoon salt; cut in peanut butter and shortening until mixture resembles coarse crumbs. Mix egg, milk and vanilla; add to flour mixture. Add oats; mix well. Spread in lightly greased 8x8x2" baking pan. Bake in 375 degree oven for 12-15 minutes. Cool; spread with Peanut Butter Frosting, cut into bars. Peanut Butter Frosting Combine powdered sugar, butter or margarine and peanut butter. Stir in enough milk until frosting is of spreading consistency.
