Cranberry Bread

4 eggs beaten well (at room temperature)
1 cup vegetable oil
3 1/2 cups flour
1 teaspoon salt
1 can cranberries plus 1 1/4 cups cranberries (fresh or dried)
3 cups of sugar (less if desired)
2/3 cup water
2 teaspoons baking soda
1 tablespoon white vinegar
1 teaspoon cinnamon
1 cup chopped nuts (pecans or walnuts)

Cream Cheese Frosting

1  8-ounce cream cheese
1/2 bar of butter (unsalted)
1 teaspoon vanilla
3/4 cup confectioners sugar
